Asturias is a rural area with traditional mountain and hill farming. We operate an organic farm using many traditional practices but also look at how to increase the value of these products. One of our major interests and concerns is how to make the local farming more profitable with a positive impact on the environment and landscape.
We have a policy of buying local and organic produce whenever possible and quality permits. We try to buy direct from the farmer or producer ensuring quality for our guests and providing alternative markets for the supplier.
We are actively working to try and reduce the impact of our business (including its carbon footprint) at the same time as giving our guests an enjoyable experience.
We recently did a review of the food we serve in the hotel restaurant and just over 33% all the food we serve is produced on our own organic farm (so has zero carbon footprint from transport). We cook on site another 20% of the food we serve from basic organic ingredients (bread, cakes, jams, etc), contributing to a big reduction in carbon transport.
The amount of meat we use is a very important factor in our carbon impact so we have a policy of always placing a vegetarian option on the menu alongside the meat option. We enjoy establishing a close relationship with farmers and producers, sharing information, and in some cases have been able to put them in contact with alternative outlets for their produce such as quality restaurants.
We have implemented various measures so as to reduce our impact on the environment such as: not use individually packed items, we recycle and encourage guests to do likewise, compost our own organic waste, use low energy light bulbs where applicable and use sensors to illuminate only when necessary, control water pressure.
We have contracted our electric supply with Electra Norte, the only Spanish company (from Asturias) which use exclusively, wind, solar and hydroelectric sources. We provide guests with information on excursions and walks in the area without using their car.
