How this vacation makes a difference

Environment

Our aims are to provide top quality Tuscany self catering accommodation in a beautiful setting, a peaceful environment and with a level of personal service to make your Tuscany vacation relaxing and memorable. All of this is done with an awareness of the balance which must be maintained with the world around us. Every effort is made to reduce the harmful effects on the environment through the use of sustainable fuel and solar energy for hot water and electricity and to produce food of the highest quality using only what nature intended.
Self catering guests are encouraged to visit local producers in Tuscany: cheese makers in Castelnuovo, olive groves in the Lucca hills and wineries at Monte Carlo (Lucca) – all small scale practices using traditional methods. Local restaurants abound and benefit from our guests’ patronage thereby aiding local employment. We point out traditional Tuscany food suppliers rather than supermarkets.

Ailsa is a trained chef who will produce gourmet meals from organic produce and local suppliers according to the guiding principles of the Slow Food Association.

Community

Local Tuscan services are recommended and they benefit hugely from the input of sensitive and responsible vacationmakers.
Where necessary we employ workers from the village to help with maintenance or to clean the accommodation. Local tradesmen built the properties using traditional materials, many of them recycled.

Story of the accommodation provider

Having run a successful small hotel in Scotland, we wanted to immerse ourselves in a different culture and what better way than to buy an abandoned farm in the Tuscan hills? As long standing members of the Slow Food Association we wanted to take a more active role in sustainable food production and to embrace the concepts of locally sourced, organic seasonal food. Biodynamic principles now dictate our annual planting and pruning and the products of our labours are available to purchase. Guests at Lavacchio can expect peace and seclusion in a traditional comfortable Tuscan home.
