Environment

We have a strict environmental policy to make sure that the environments we visit are not damaged in any way. Our “Leave No Trace” ethic is applied to each one of our trips, and as a responsible tour operator, it is something we are careful and steadfast about promoting. Each one of our guides are trained to uphold, promote and put into practice such responsible behaviour, especially in wilderness areas or whilst traveling to UNESCO heritage sites, which many of our trips undoubtedly do. We attempt to reduce plastic bottle use wherever possible by promoting use of reusable bottles. We understand this is not always possible in countries where tap water is not safe to drink.

In designing this culinary tour of Colombia, we hope to highlight where ingredients come from (such as the cacao for Amelia uses in her chocolate). You'll get to see plantations and meet farmers who will explain what goes into production giving you a greater understanding of the environmental impact of chocolate and coffee, for example.

By keeping the group size to a maximum of 12 on our trip through Colombia, we can also minimise the human impact on the fragile sites and ecosystems we visit. We attempt to reduce plastic bottle use wherever possible by promoting use of reusable and filtered water bottles. Our partnership with Water-To-Go provides a discount on filtered water bottles to our clients. We do not provide water from plastic bottles to our clients in country but always ensure there is regular access to drinking water on our tours.

On this culinary tour we will be delving into the chocolate culture of Colombia. Set against the backdrop of one of the most exciting and energetic countries in South America, the journey focuses on the rich importance that cocoa and chocolate has played in Colombia, both as a cultural tradition and as an economic lifeline from the once rampant drug trade. We'll be visiting cacao research centers, farms, coffee plantations and museums as well as sampling good food in the cities and villages we visit along the way - all of which supports local business.

Hosted by enthusiastic chocolatier Amelia Rope, the founder of Amelia Rope Chocolate, this enriching and aromatic adventure takes us into the heart of Colombia’s cocoa industry. Amelia chose to source her chocolate ingredients from Colombia in order to contribute to this growing industry and help rebuild the country after an unfortunate past. She will take us to meet suppliers and explore the coco plantations that she has partnered with.

With Amelia as a passionate and knowledgeable host, we’ll journey from the bustling center of the country’s capital and deep into the rich landscapes of the central highlands and the western hills. On this particular tour we will be promoting the ancient heritage and natural landscape of Colombia by visiting Popayan, a UNESCO City of Gastronomy. The unique food culture derived from Spanish, African and Colombian origins maintains the cultural heritage of Colombia.

On each Group tour we use local ground handlers. This means that all operational costs go directly into the local economy and help improve employment opportunities in remote regions. Such support can also be seen in our incorporation of homestays, locally owned hotels, family run restaurants and the services of local guides and drivers into our itineraries, which ensures that the money you spend with us goes directly into the local economy and local community.
