Andalucia offers activity breaks as different as lynx watching and tango lessons – though they do have one thing in common - both will lift your inner spirits. The Iberian lynx is critically endangered, but can still be seen amid the scrubby grasslands and forests of the Sierra de Andujar. Responsible tourism operators help your luck along by providing trained zoologists and expert guides as you roam the rocky landscape on foot, eyes always peeled.Try an Andalucia foodie tour, exploring in vivid sensory detail the region’s distinctive cuisine, from the fish markets and tapas bars of Cadiz to local producers of jamon iberico and ‘liquid gold’ – olive oil. Your trip can also be combined with some idyllic trekking, great for working off calories so you can let your appetite go wild. Or go horseriding in the stunning Sierra Nevada National Park, where rugged valleys are home to nimble mountain goats, wildcats and over 60 bird species, including golden eagle, griffin vulture, golden oriole and hoopoe.

Food here blends an ancient Roman troika of olive oil, wine and wheat with a corresponding lip-smacking Moorish trio of saffron, coriander and rice. Peasant influences shine in dishes like quail in gazpacho and hearty empedraillo (white bean stew).
Superb Iberico ham has a wonderful fishy counterpoint in mojama (air-cured tuna). Add delicious sheep and goats cheese, boquerones (pickled anchovies) and amazing shellfish – washed down with varied sherries like fino, manzanilla and oloroso.

Walking the far south
Walking in Spain’s southernmost region combines exotic landscapes and romantic culture with superb food and a warm Andalucian welcome. Stay in friendly fincas along the way – many guesthouses produce their own organic olive oil, wine or fruit; food is fresh and has travelled metres rather than miles.
Las Alpujarras boasts the imposing backdrop of the Sierra Nevada. There are lakes fed by mountain streams, lush valleys, roman ruins and tiny pueblos. Stay in a whitewashed village in Almeria, shopping at the local market and trekking the surreal landscape of the Sierra de los Filabres. Come in spring for wildflower carpets and bird watching. Nearby, the coastal desert of Cabo de Gata has several walking trails through the Nijar National Park, beloved of botanists and photographers.
